Cannelloni

 Cannelloni

One of the best cuisines, in my opinion, is Italian. Perfectly matching tastes and seasoned flavors.
This time I'll share the all time Italian favorite - Cannelloni.

You will need:
16 Cannelloni pasta rolls
250g Ricotta cheese
Spinach
Garlic
Onion
Tomatoes (canned)
Mozzarella
Salt
Pepper


Set your oven for 180 C degrees.

First of all I cook the spinach together with crushed garlic and a little bit of salt and pepper. Don't worry if there's a lot of spinach - it will all cook down eventually. Try to not overcook them because the spinach will become dark and will loose all its color.
Then after about 5 min. take out all the spinach and let it cool while we make tomato sauce in the same pan that the spinach was cooking.
Chop onion and cook for about 2 min. until they get nice yellow color. Then take two canes of tomatoes, pour them into the pan and heat up with some salt and pepper.
The spinach should be not that hot anymore so we take a handful and squeeze all the juices out of them, but do not throw out anything. Then mix ricotta cheese into the spinach and all its juices.

Then stuff the cannelloni pasta rolls with the ricotta filling. I use a plastic bag with a 1-2cm hole cut in the corner. Then lay your cannelloni in a baking pan with the tomato sauce (my pan that I used for cooking spinach and then tomatoes is also fit for cooking in the oven). And lay them over with mozzarella.

Try to fit all of the cannelloni in one pan

Cook for about 40min.
